MasterChef Tommy’s Vietnamese Soup

Ingredients
Serves 4
- 1.5 tsp neutral oil
- 1/2 onion finely diced
- 250g minced pork (substitute with mushrooms or tofu)
- 1/2 tsp fish sauce
- 800g pumpkin chopped roughly
- 750ml water
- 1 tsp fish sauce
- 1 sprig spring onion finely chopped
Recipe
- Add oil and onion to a pot on medium heat & cook until onion is soft
- Add minced pork, fry and separate pork for approx 5 mins
- Add 1/2 tsp of fish sauce
- Add pumpkin and water into the pot
- Bring to the boil, half cover and simmer until the pumpkin is soft.
- Serve with finely chopped spring onion
