MasterChef Tommy Pham’s Chinese Spinach & Cheese Flatbread
Tommy’s Chinese Spinach & Cheese Flatbread
Ingredients (serves 5)
- 1/2 cup halloumi grated
- 1 cup grated cheese
- 1 cup ricotta cheese
- 1 cup finely chopped baby spinach
- 1/2 cup spring onion finely chopped
- 1-2tsp grated ginger (optional start with v little if your littles don’t watch ginger)
- 1/2 tsp five spice powder
- 6 flatbreads/Lebanese bread
- 1 cup grated cheese for sprinkling
- Oil for pan frying
Method
- To make the filling combine halloumi, cheese, ricotta, spinach, spring onion, chinese five spice & ginger in a bowl and mix to combine.
- Place flatbreads on the bench and spread filling over the flatbread, pushing to the edge. Top with a sprinkle of cheddar cheese and place another flatbread on top of the filling. Press down to stick.
- Heat a drizzle of olive oil in a pan over low heat and add the flatbread. Give it a little shake to coat the bread in oil. Cook on each side for 3-4 minutes, until golden brown and the cheese has melted.
- Transfer to cutting board and cut into triangles or squares to serve. Garnish with a squeeze of lemon if you’re feeling fancy and enjoy!
