MasterChef Tommy Pham’s Easy Pho
Tommy’s Beef Pho with Vegetable Noodles How-To Video
Ingredients
Broth
1 stick cinnamon
6 stems cloves
3 pieces star anise
1 black cardamom (optional)
1l good quality bone broth stock
1/2 tsp bone broth concentrate powder (optional)
1 onion quartered
2 cm ginger sliced
1 tsp fish sauce
1-2 tsp sugar
pinch salt
Noodles and beef
100g dry pho noodles (cooked per packet instructions)
1 carrot peeled
1 zucchini peeled
200g finely sliced beef
Garnishes (optional)
1 bunch coriander chopped
1 bunch spring onion chopped
1 bunch basil chopped
Recipe
- For the pho broth place the spices (cinnamon, star anise, cloves and black cardamom) into the microwave for 1 minute, remove from the microwave and place in muslin cloth or strainer box
- Add the rest of the broth ingredients into the pot with the spices and bring to a boil, once boiled simmer on low while preparing the rest of the ingredients (at least 20mins)
- For the noodles and beef, finely slice the zucchini and carrots with a peeler into sheets, stack the sheets and slice the vegetables into noodles
- Add vegetables noodles into a pot of boiling water until soft (approx 2 mins) remove from water and set aside
- Remove onions, ginger and spices from the broth
- Poach the beef in the broth until just cooked (approx 4 mins), remove from broth and set aside
- To assemble place pho noodles, zucchini noodles, carrot noodles, beef and herbs into a bowl, pour broth into bowl and enjoy 😊
