MasterChef Tommy Pham’s Vietnamese Lemongrass Chicken Noodle Bowl

Who doesn’t love a bowl of noodles! This family friendly recipe by MasterChef Tommy Pham is perfect for the whole family! Super fun to eat, nutritious & tasty what’s not to love!

Tommy’s Vietnamese Lemongrass Chicken Noodle bowl

Top tips from Tommy “I like to use carrots and cucumbers as my main veggies for this dish but sometimes when the kids are feeling abit picky I’ll add some apples sticks to really get them into it! There are literally no rules chuck whatever you need into this dish to make it fun and exciting for the kids! PS. you can sub out the chicken for a beef steak or even mushrooms for when you want to go meat free!”

Ingredients

  • Lemongrass & Sesame Oil Chicken
  • 2 tbsp oyster sauce
  • 2 tsp sesame oil
  • 1 tsp dark soy
  • 1 tsp fish sauce
  • 1 tsp rice syrup or sugar
  • 4 tbsp lemongrass minced
  • 6 cloves garlic minced
  • 5 chicken thigh fillets (700g)

Noodles and Veggies

  • 1 packet rice noodles cooked per packet
  • 2 carrots grated
  • 2 cucumbers shaved or sliced
  • *optional apple cut into sticks for fun kids love fun food*

Garnishes (optional choose your faves)

  • Roasted peanuts crushed
  • Fried shallots
  • Mint
  • Coriander
  • Chilli sliced (parents)

Optional Nước Mắm Dressing for parents*

  • 4 tbsp fish sauce
  • 4 tbsp white sugar
  • 6 tbsp warm water
  • 2 ½ tbsp lime juice or rice wine vinegar
  • 2 garlic cloves minced
  • 1-2 Birdseye Chillies minced (added after)

How to:

  1.  For the lemongrass chicken, mix all ingredients in a large bowl, add chicken and marinate for at least 15 mins.
  2. Add oil to a pan on medium-low heat and fry the chicken (turning constantly to avoid burning) until there is some nice colour on the chicken.
  3. Add water and cover with a lid for approx. 6 minutes or until chicken is cooked through
  4. Remove lid and cook until the sauce slightly thickens, place chicken on the plate and pour sauce over (note you may need to cook the chicken in batches) T
  5. To serve, place a serving of rice noodles, carrots, cucumbers, chicken and chicken sauce into a bowl.
  6. Garnish with peanuts, fried shallots etc.
  7. Enjoy!

*For the parents Nước Mắm dressing mix all ingredients in a bowl until sugar is dissolved and pour over noodle bowl to enjoy!
