Ingredients

Fritters:

  • 1 1/2 cups plain flour
  • 4 tbsp potato starch or corn starch
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 cloves garlic minced
  • 1 cup cold water + more if required
  • 1 carrot julienned
  • 1 zucchini julienned
  • 1 potato peeled julienned
  • 1 bunch green onion cut in half
  • Neutral oil for frying

Dipping Sauce:

  • 2 tbsp soy
  • 1 tbsp rice vinegar
  • 2 tbsp water
  • 1 clove garlic minced
  • 1 tbsp honey
  • 1/2 tsp sesame oil

Equipment required:

  • Small bowl
  • Large bowl
  • Measuring spoon
  • Non-stick pan
  • Ladle
  • Spatula
  • Plate
  • Paper towels

Recipe

  1. Julienne / grate your favourite vegetables
  2. Mix the flour, starch, baking powder and salt together
  3. Add the garlic and water into the mix and stir until smooth (add more water if needed)
  4. Heat 2 tbsp of oil in a non-stick pan over medium heat
  5. Mix the veggies in with your batter mix
  6. Pour a ladle (1/2 cup) of batter into the pan
  7. Cook until the bottom layer is golden (4 mins)
  8. Flip fritter and cook until golden, remove fritter from pan and onto a plate lined with paper towels
  9. Repeat process for remaining batter and vegetables
  10. For the dipping sauce combine ingredients in a small bowl and mix evenly
