MasterChef Tommy Pham Recipes On OAC Winter Menu

We are very happy to share that OAC Ambassador, MasterChef Tommy Pham recipes are back on the menu for Winter! Tommy has teamed up with our OAC Dietitians to create 2 delicious and nutritious menu options for children to enjoy in campus. The campus cooks will be preparing Tommy's Vietnamese Beef Stew & Tommy's Mango & Coconut Oat Muffins as part of our rotating Winter Menu in campuses this month!

MasterChef Tommy Pham Recipes On OAC Winter Menu

Our preschoolers at OAC Coogee Carr St helped us taste test MasterChef Tommy Pham’s new menu items at their very own Carr St Cafe.  It’s safe to say the new recipes were a big hit!

Tommy’s Vietnamese Beef Stew

Ingredients (serves 5)

  • Extra virgin olive oil – 1 tbsp
  • Casserole beef, diced – 600g
  • Brown onion, finely diced – 1
  • Garlic, minced – 1 tsp
  • Carrot, diced – 2
  • Mushroom – 200g
  • Tomato paste, salt reduced – 60g
  • Tomatoes, canned, diced – 400g
  • Vegetable stock, salt reduced* – 500mL
  • Cinnamon, ground (optional) – ½ tsp
  • Chinese five spice (optional) – 1 tsp
  • Lemongrass stalk, bruised (or lemongrass paste) – 1
  • Rice – 300g
  • Spring onion chopped to serve (optional)
  • Thai basil chopped to serve (optional)

Method

  1. Heat oil in a medium frying pan over medium heat and sauté onion, garlic and
    until the onion is translucent.
  2. Add the beef to the pan and cook, stirring occasionally until browned (you may need to do this in a few batches).
  3. Add carrot, mushrooms, tomato paste, tomatoes, stock, lemongrass, cinnamon and Chinese five spice and bring to the boil (Note: you may need to add additional water here if you require more liquid).
  4. Reduce heat, cover and allow to cook until beef is tender (around 2 hours).
  5. Meanwhile, cook rice according to packet instructions
  6. Remove and discard lemongrass from stew.
  7. Serve stew with rice and option to top with spring onion & Thai basil

 

Tommy’s Mango & Coconut Oat Muffins

Ingredients (serves 10)

  • Rolled oats – 1/2 cup
  • Wholemeal flour – 250g
  • Baking powder – 1 tsp
  • Frozen mangoes thawed – 2 cups
  • Extra virgin olive oil – ¼ cup
  • Coconut milk – 1 cup
  • Vanilla extract – 1 tsp
  • Egg or egg replacer, whisked – 1
  • Rice malt syrup – ¼ cup

Method

  1. Pre-heat oven to 180 degrees Celsius
  2. Line muffin tray(s) with paper cases or spray muffin tray with olive oil.
  3. In a bowl, mix together the rolled oats, flour & baking powder.
  4. Puree or mash frozen mango.
  5. In a separate bowl combine egg(s), pureed mango, milk, olive oil, vanilla extract and rice malt syrup.
  6. Pour wet ingredients into the dry mixture and stir together. Be careful not to over-stir.
  7. Spoon the mixture into muffin cases and bake for 20 – 30 mins or until cooked.
