Deconstructed Tuna Sushi Bowl Recipe
This is a fun, quick and healthy recipe that kids and adults will love. This sushi bowl is packed full of essential nutrients such as vitamin A, vitamin C, vitamin B12, iodine, iron, and calcium, plus it is an excellent source of protein.
How to make tuna sushi bowl:
Makes: 10
Ingredients
- 1 1/2 cups brown rice, uncooked
- 475g (5 small cans) tuna, in spring water*
- 1 cucumber, diced
- 1 avocado, mashed
- 3 tbsp Greek yoghurt
- 1 tbsp soy sauce, salt reduced
- 2 tbsp lemon juice
- 1 carrot, grated
- Nori, shredded (optional)
Method
- Cook the rice according to packet instructions.
- Drain tuna and mix with soy sauce.
- Combine mashed avocado, lemon juice and yoghurt.
- Top cooked rice with tuna, diced cucumber, shredded carrot, avocado.
- Garnish with nori (optional).
*For a vegetarian option, tuna can be replaced with cubed tofu.
