Let us take the stress out of meal times with a Spring Ham and Veggie Slice recipe that the whole family can enjoy!
Serves: 6
Ingredients
-
1 tablespoon extra-virgin olive oil
-
1 brown onion, finely diced
-
2 garlic cloves, crushed
-
200g ham off the bone, finely chopped
-
5 zucchinis, grated, excess juice squeezed out
-
⅔ cup corn kernels
-
1 carrot, grated
-
½ red capsicum, finely diced
-
1 ¼ cup wholemeal self-raising flour
-
1 cup grated cheese
-
4 eggs
-
¼ bunch parsley, roughly chopped
-
½ cup milk
-
Pepper to season
Method
-
Preheat oven to 180°C and line a 20cm x 30cm rectangular baking dish with baking paper

Heat a frypan over medium heat and add olive oil. Add onion, garlic and ham to the pan and sauté for 3 – 4 minutes
-
Combine zucchini, corn, carrot, capsicum, flour, cheese and parsley in a large bowl
-
Whisk eggs and milk together in a separate bowl then add to the large bowl
-
Remove the garlic, onion and ham from the frypan and add to the large bowl
-
Mix all ingredients until well combined
-
Pour into baking dish
-
Cook in the oven for 50 minutes until golden.
