Let us take the stress out of meal times with a Spring Ham and Veggie Slice recipe that the whole family can enjoy!

Serves: 6

 

Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 1 brown onion, finely diced

  • 2 garlic cloves, crushed

  • 200g ham off the bone, finely chopped

  • 5 zucchinis, grated, excess juice squeezed out

  • ⅔ cup corn kernels

  • 1 carrot, grated 

  • ½ red capsicum, finely diced

  • 1 ¼ cup wholemeal self-raising flour

  • 1 cup grated cheese

  • 4 eggs

  • ¼ bunch parsley, roughly chopped

  • ½ cup milk

  • Pepper to season

 

Method

  1. Preheat oven to 180°C and line a 20cm x 30cm rectangular baking dish with baking paper

  2. Heat a frypan over medium heat and add olive oil. Add onion, garlic and ham to the pan and sauté for 3 – 4 minutes

  3. Combine zucchini, corn, carrot, capsicum, flour, cheese and parsley in a large bowl

  4. Whisk eggs and milk together in a separate bowl then add to the large bowl

  5. Remove the garlic, onion and ham from the frypan and add to the large bowl

  6. Mix all ingredients until well combined

  7. Pour into baking dish

  8. Cook in the oven for 50 minutes until golden.
