Lemon and Blueberry Bread

Makes 1 x loaf



  • 2 cups wholemeal flour

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 2 mashed bananas

  • ½ cup thawed frozen blueberries

  • 2 lemons zested

  • ¾ cup milk (dairy free or cows)

  • 1/3 cup extra virgin olive oil

  • ¼ cup rice malt syrup


  1. Preheat oven to 180 degrees Celcius.

  2. Line a medium size loaf pan with baking paper.

  3. Gently combine the flour and cinnamon in a mixing bowl.

  4. In a separate bowl combine mashed bananas, vanilla extract, milk, oil and rice malt syrup.

  5. Add the dry ingredients to the banana mixture, along with the blueberries and lemon zest.

  6. Pour the mixture into the loaf pan and bake for 60 minutes or until the skewer comes out clean.

  7. Leave to cool on a wire rack before cutting into slices and serving.
